Personal Sized Vegetable and Mushroom Quiche

A great way to use leftover vegetables and mushrooms. 


1 Package Maitake 
1 Package Bunapi
1 cup (40g) Carrots
1 cup (40g) Broccoli 
1/2 cup (60g) Onion
2/3 cups (5.3 oz) Milk 
1/2 cup (4oz) Fresh Cream 
8 Spring Roll Wrappers 
1 Tsp Butter 
1 Tsp Salt 
Pepper, to taste
2 Tsp Parmesan Cheese  


  1. Cut Bunapi off of base and divide into small portions. Additionally, Divide Maitake into small portions. Cut onion, carrots, and broccoli into small portions and stir fry in a pan, making sure to add mushrooms, sautéing with butter until tender. 
  2. Mix milk, cream and eggs seasoning with salt, pepper, and Parmesan cheese, mix in vegetables 
  3. Line Containers with Spring roll Wrappers and fill with egg mixture and bake for 15 – 20 minutes in a 375 Degree Oven or until a skewer comes out clean.
