Ingredients
1 Package Eryngii ( King Trumpet)
1/4 Pumpkin
1/2 Cup Milk
Salt and Pepper, To taste
3 Tbsp Chopped Parsley
3 Tbsp Butter
60g Cheese, of choice
2 Tbsp Vegetable Oil
Directions
- Peel and Cut the pumpkin into small portions then boil until easily pierced with a fork
- Cut Eryngii into long strips. Then in a frying pan, heat 1 tbsp oil and fry.
- Add another 1 tbsp of oil, pumpkin, and milk. Allow the mixture to simmer.
- Butter a Gratin dish and add in the mixture, and top with cheese. Bake for 10-15 min in a 425°F oven (220°C).
